craft ethics of a cocktail runner
- We understand that we are the last defensive to make sure that our guest receive perfectly created hand craft cocktails, ice cold beer and their favorite wine quickly and efficently.
- When we deliver drinks we engage with our guest and understand that our engagement affects our guests experience and adds to the preceived value of thier drink. All guest should be greeted first with "Aloha folks," or "Hi everyone!" and the name of their drink. All stemless drinks will be delvered with beverage napkins.
- We properly sanitizing our cocktail station during downtime using clean rags and sanitzer spray
- We organize our cocktail station & garnishes, ensuring that all ingridents are the freshest quality and that we are not over or under prepping ingridents while keeping all garnishes in proper rotation.
- We ensure that polishing clothes are always properly folded when not in use.
- We remove empty glasses from tables up delivery or way back to cocktail station
- We ensuring that trays are kept clean and organized and make sure that our towels for cleaning are refreshed through out the entire shift for cleanliness.
- We keep the ice bin full & help our well bartender and our station stay stocked with all needed glassware.
- We make sure our glass rack stands are properly stored after use
- We keep our cocktail cabinets clean and stocked throughout the night
- We ensure that all rags are cleaned throughout the evening
- We keep all personal drinks in proper storage areas and out of guest view
- We know that we should not use our phones in any drawers or in any place that is in our guests view
- We make sure that wine glasses are being brought out from dish pit and help keep our bar back and servers wine glasses stocked by polishing the wine glasses during downtime
- We engage all guest with a smile and aloha upon drink delivery. We understand that our engagement with the guest affects the value of their drinks that they recieve
- We always walk with a smile through out dining room at all times and know that it is part of our uniform
- We use safety words at all times especially with full trays and are kind to all guest even if they are in our way by using words like “Please excuse me,” “Right Behind”, “On the side of you”, “corner”, “In front of you”
- We connect with all guest as we walk by them “aloha folks”, “Aloha, welcome to Monkeypod”,” Have a great night”, “Thank you for joining us” and always thank them upon leaving our restaurant.
- We always work with a tray and napkins
- We ensure that drinks are delivered with-in 3 minutes of drinks being made and that it is our job to return promptly to the cocktail station
- We do bathroom checks anytime we are in the restroom. This includes soap, napkins, toilet paper, and the floor.
- We help check the outside waiting area for empty glassware anytime we are on the front lanai
- We always connect with a guest as we walk by them “aloha folks”, “Have a great night”, “Thank you for joining us”, “Aloha, welcome to Monkeypod”
- We ask for help at appropriate times
- We 86’d items though proper communication and always directly letting any server who ordered the 86 item know first
- We always stay up to date with all menu changes and beverage knowledge
- We use our binder upon arrival and signed off upon leaving. We also use it to communicate any important information or missed sidework.
- We always check out with a manager prior to leaving
