OPENING SIDEWORK
JOB OVERVIEW: Set up bar, make culinary cocktails & beverages going out to service well to restaurant. Service bar customers and complete break of down bar at the end of the night.
OPENING SIDEWORK
- Stock bar with bus rags, napkins, and polishing rags
- Setup bustubs
- Stock bar with Roll-ups, plates, napkins
- Setup all wells and garnishes
- Check juices, syrups, and garnishes/fruit in the coolers. refill and stock as necessary
- Stock pints in freezers, supply service well with buckets, pints, tikis, and mason jars
- Polish wine glasses
- Check on wines by the glass, make sure you have enough
- Stock bar towels
- Make sure dishwasher top is clear and backbar looks presentable
- Check keg room (feel which kegs are closes to finishing, organize the mess)
- Fill each well with ice
- Wipe down bar top and make sure that chairs are lined up correctly with 6 foot distance between tables & other bar chairs
- Make sure TVs get turned on to surfing channel 1020
- Notify Manager if we are out of any product
- Get a walkie talkie to be able to communicate with Manager or other positions if needed
ONGOING SIDE WORK
1. Keep all juices/syrups, liquor, and glassware stocked.
2.Keep service well stocked (Bar 2 should assist with helping stock the well)
3. Bar 2 – If you have time available, Pour all beer and wines on the yellow tickets for the well bartender in a timely manner
4.Always be multi-tasking. if you’re walking to the makai dishwasher, make sure to grab clean glassware on your way back. If you have to change a keg check your juices and wines before walking all the way to the keg room, maximize your efficiency.
5. Clear the bar top when customers leave.
6. Empty bus tubs and bring bar glassware out as needed to bar from dish pit
7. Grab pies from the back, radio manager if you need someone to check on something for you.
8. If you need to pull wine from the keg room make sure you log it in the break sheet.
9. Communicate with Manager if you need help, if you cant immediately find a manager please have the greeter radio a manager to you.
