AM SERVER SIDEWORK 2021

Closing Sidework:
Must have 7 full bins of rollups, please check in with the AM MOD at 3:45 for the necessary rollup count. Polish any remaining silverware. Roll-ups need to be visually verified by MOD prior to putting away in roll-up station. ***Roll-ups are primarily servers responsibilities.
Fold 10 Pizza Boxes
Clean/restock the server station.
Run glassware to the bar.
Section 1:
- Brew ice-T.
- Collect ice-T pitchers from dish pit.
- Distribute any trays left in the dish pit.
- Fill ice bin with 3 buckets of ice.
- Fill ice-T pitcher and bring 1 or 2 to cocktail station.
- Refill coffee grinds, then refill the coffee grinder with beans.
- Get coffee dump station from dish rack/back prep area for the server station.
- Cut lemons and make sure there are tongs for lemons.
- Make sure the sugar refills (deli cups), tea bags, chopsticks, straws, keiki cups/lids are all stocked for service.
- Restock the server station with the following from dishpit: French Presses, coffee mugs, creamers, saucers, bone bowls/lemon bowls, and wine chillers.
- Restock the server station fridge if necessary, with milk, creamer, and condiments (check expiration dates). (1 container of mayo, wasabi, and tartar) *no horseradish or cocktail sauce available** shelf life of condiments is 1 week
- Set up parmesan cheese and crushed red peppers in server station, 1 deli cup of each be sure to label. Only fill each container halfway full.
- Restock 4 brown paper towels near kitchen/dishpit sink
- Set up a small stack of trays in service station for water service
- Immediately Following Pre-service, sanitize any table you sat on. Report to Host 1 area to prepare for seating your first table. Please do your best to practice social distancing while waiting for your guests to arrive to wait area. You should greet them in the front greeting area.
Sections 2 & 3:
- Get a sanitizer buckets from the dish pit and fill with sanitizer to clean tables with.
- Wipe down all outside tables, chairs and wipe down tops of pillars on the side lanai. Unused clean towels should remain neatly folded at all times.
- Unlock all outside tables (key on black lanyard in manager office). Put the locks in the lockbox and return to bottom drawer in outside server station. Hang all cables in the back elevator area.
- Unlock server station computer.
- Stock the front chalkboard with B&B plates.
- Polish all wine glasses, and make sure there are no carts or glassware rollies on the floor before preservice.
- Set up “needs to be sanitized” trays at each terminal
- Dial in dining room, be sure to check all inside tables to make sure tabletops are cleaned, chairs are crumbed.
- Sweep all inside dining room, check under tables all tables, entrances and be sure that there is no debris anywhere.
- Make sure that all entrance mats are clean and straightened.
- Pick up any trash along the perimeter of the bushes surrounding the side lanai.
- Turn on the fans for side lanai
- Make sure all tables are aligned properly. Tables should all be on top of the green tape for social distancing. Slats should all be facing same direction.
- Set up side lanai hutch with polished silverware and polished share plates.
- Make sure there are no dirty buckets, cleaning rags, trash, etc laying around outside before you sit down for preservice.
- Fold 50 white linen and 10 black linen. Distribute 25 white linen to the hutches and stock 25 white linen in the server station.
- Open up windows in the back 80’s (please stand on a rag so you don’t get shoe marks on the bench!)
- Wipe down front entry stairs and front lanai/waiting area. Must be free of water, trash, and debris (use a broom or mop if necessary).
- Wipe down the front waiting area: green chairs, bar top, gray bench, and both wooden benches. Make sure the cables/locks are removed and make sure all the extra black chairs are faced towards 51/52 (they should not be seatable)
- Make sure EXIT signs are outside along sidewalk by table 21
- Setup candle holders (no candles for AM service) on to all tables, if need extra please let a manager know
- Bring any extra glassware to the bar and service station
- Polish any remaining silverware in dish pit

Make sure all tables are marked for all courses before food or drinks arrive
Fill up water carafes and replace them in the bar walk-in
Run drinks (not just your own ; ) )
Have hands for the food runner
Keep B&B plates polished & stocked
Bring trays from the dish pit and disperse to server station and cocktail station
Sanitize check presenters, pens, and menus from the “needs to be sanitized” areas
Run glassware from the dish pit to the bar
Keep all server stations neat, tidy, and sanitized
Fill silver water pitchers with ice water for the server station Restock pints in the server station
Keep ice in the server station stocked
Help bus/sanitize tables
