- Check in guests, collect info (first/last name, phone number) for OpenTable.
- Manage waitlist, make sure each guest is willing to comply with our safety guidelines.
- Make sure guests don’t come upstairs unless they are picking up a takeout order that they have already ordered or if the guest is next up next to be seated at a table (2 party maximum allowed in the waiting area).
- Sanitize buzzers if a guest requests a buzzer rather than text alerts.
- Instruct guests to wait in their car until they are text/buzzed. Instruct guests to wait in the upstairs waiting area until a greeter comes outside to seat them.
Opening sidework:
- Set up downstairs greet stand at 2:30pm, Put up sign with check in directions
- Bring down iPad, buzzers, walkie talkie, etc. Sanitize all buzzers.
- Grab your walk-talkie and head set. Be sure to have your walkie-talkie on prior to pre-service.
- Set up sanitizing station (Sani bucket or spray bottle and rags) .
- Bring hand sanitizer stand downstairs. Double check that it has enough solution.
- **Check in at least 4 groups of guests before opening so they can be called upstairs right at 3:30**
Ongoing sidework:
- Sanitize buzzers and any surfaces touched by guests.
- Maintain ongoing communication with the upstairs greeter about parties being sent up to waiting area to be seated.
- Actively manage the waitlist and quoted wait times.
Closing sidework:
- Bring downstairs greet stand inside the restaurant.
- Plug in iPad, buzzers, and walkie talkie to be charged overnight.
- Sanitize all buzzers, iPad screens, and menus.
- Do 100 rollups. Be sure to wash& sanitize your hands before starting to polish silverware & doing roll-ups
- Bring all the hand sanitizer stations inside (4) and wipe them down.
- Check with the rest of the team members to see if there is anything else that you can do to help out

up stairs head greeter - host 1
Job Duties:
Communicate with the Maitre D' on channel 2. Communicate with the busser/runner/manager on channel 1 (switch back and forth when necessary, but your primary channel should be channel 2). Maintain frequent communication with the Matire D' about table updates, including bar seats. Use G1 iPad, keyboard, and phone ONLY for sanitary purposes.

- Seats first round of tables from the waitlist until the restaurant is filled:
- Seat the first two rounds of tables, wait 15 minutes, seat another round, wait 5 minutes, then seat the last round.
- For the first two rounds of tables, stay at the G1 computer.
- Seat tables in order from the waitlist and hand chit to servers/staff to seat.
- After the first two rounds of tables, have the G2 seat tables when possible.
- Only leave the G1 computer when necessary.

- Collect all floor maps from the restaurant (greet stand, server station, & side lanai server station).
- Get the labor board from MOD and fill out the floor maps, and re-distribute (Greet stand, service station)
- Assign server sections on Guest Center
- Set up rollup station: wicker basket filled with rollups and medium rectangle plates (wiped). Put the rollup station on table 43 for the first round of seating, then move it to the table behind the greet stand
- Get walkie talkie & head set . Be sure to have your walkie-talkie on prior to pre-service.
On-going Side work:
- Maintain frequent communication with Maitre D’ regarding the waitlist and table options.
- Update the Guest Center floor map as frequently as possible.
- Assist in sanitizing supplies & greeting guests at greet stand.
- Keep roll-ups & plates stocked for walking guests to table
- Answer phones when possible, place calls on hold when necessary.
- Communicate with manager if we are exceeding wait times, or expecting alot of tables in the 8:30 hour
- Help call guests who are unable to be paged
- Radio manager when last table is seated and what wait tim
Closing Side work:
- Sanitize the G1 iPad, keyboard, and phone
- Restock the rollup station with rollups and wiped rectangle plates
- Restock to-go supplies for greet stand (fork, condiments, paper bags)
- Return walkie talkie to the charging station
- Do 100 rollups. Be sure to wash& sanitize your hands before starting to polish silverware & doing roll-ups.
- Check with the rest of the team members to see if there is anything else that you can do to help out

HOST 3
- Responsible for all takeout orders and the cash bank.
- Answer phone calls
- Seat guests from the upstairs waiting area to their table
- Frequently sanitize the upstairs waiting area (chairs, tables, and benches)
- Use the G2 iPad, keyboard, and phone ONLY for sanitation purposes
- Use channel 1 on walkie talkie to maintain communication to bussers/runners/managers
- Frequently update the Guest Center floor map based on tables called out by the busser
- Information you must write down for all takeout orders:
- NAME, PHONE NUMBER, ORDER AND MODIFICATIONS, TIME ORDER IS TAKEN.
- If the guest is willing, you may take payment over the phone to avoid guest interaction.
- ALWAYS DOUBLE CONFIRM WAILEA LOCATION! Get the hotel name if possible.
- If it is not busy quote 15-20 minutes, if it is busier quote 20-25 minutes, if it is a large order quote 25-30 minutes
- If there is a dessert be sure to highlight on ticket and double check that it gets brought out. They do not show up on the food runner screen. The runner will double check food modifications, ingredients, and write ticket name on bag.
- Greet guests in the waiting area when they arrive upstairs. and take them to a the table designated by Host 1.
- If guest will be waiting for a table, please bring them a menu and assist guests in the upstairs waiting area with a beverage while they wait for their table.
- **MAKE SURE TO TRANSFER THE TAB TO THE SERVER AS SOON AS THE TABLE IS SEATED**
- Takes over G3 responsibilities when there is no G3 (phase 1)
Opening Sidework:
- Get bathroom key from Manager and fill both bathrooms under the sink with Hand towels and toilet paper for bathroom
- Set up sanitation station at the greet stand: 10 rags, red sanitation bucket filled with sanitizer, a newly filled sanitizer spray bottle (use disinfectant on the right PINK to refill your bottle), a “needs to be sanitized” tray and a “dirty pens” mason jar.
- Get walkie talkie
- Double check that all to-go supplies in greet area is re-stocked (to-go silverware, peppers, salt, parmesan, pepper packets, brown bags)
- Bring a small stack of to-go cups & lids for to-go soda and place on bar back counter near back up supplies that is easily accessible to you.
- Assign cash drawer, count money, and put it in the register.
On-going Sidework:
- Sanitize all menus, pens, and check presenters as they are used
- Clear any empty glassware from the upstairs waiting area immediately
- Sanitize waiting area (3) benches, front door handles, Waiting counter, Green chairs
- Maintain an organized workstation for all to go orders.
- Promptly cash out orders and keep receipts organized in the drawer.
- Help keep roll-ups & plates stocked for walking guests to table
- Seat guests at tables (remember to walk slowly)
- Welcome guest, Introduce the menu and QR code
- Remind guests of Maui Public Emergency Laws so that we do not need to interrupt their dining experience.
- While seating, take note of tables that need to be updated
- Get highchairs/ booster seats for guests
Closing Sidework:
- Sanitize the G2 iPad, keyboard, phone, and Aloha terminal
- Sanitize all menus, check presenters, and pens
- Collect all menus from the bar and sanitize the menus, keep at greet stand
- Sanitize the greet stand and the table behind it.
- Run any trays through the dishpit and dispose of any sanitizer buckets and rags.
- Empty greet stand trash and replace trash bag.
- Tidy up the greet stand; make sure it is ready for service the next day.
- Return walkie talkie to the charging station
- Complete the takeout cash out and turn it into a manager.
- Check with the rest of the team members to see if there is anything else that you can do to help out
- Check out with a manager
